For fruity lamb ribs, first preheat the oven to 200 °C.
Finely chop the thyme. Rub the meat on all sides with salt, pepper and thyme. Place the lamb ribs with the bones facing each other in a baking dish or roaster. Place in the oven for about 25 minutes. Let rest for a few minutes before serving.
While the ribs are in the oven, prepare the salsa. To do this, peel the pineapple and cut out the core. Cut the pineapple into small pieces. Wash the onion and cut into fine rings. Remove the seeds from the chili pepper and chop finely. Grate the lime peel and squeeze out the juice. Mix all ingredients for the salsa.
Serve the fruity lamb ribs with salsa.
