Remove the roast from the bone or have the butcher do it right away. Place the bones in a roasting pan. Finely chop garlic and plucked rosemary and mix with salt and pepper. Spread half of the mixture on the bones, place the meat on top of the bones and rub firmly with the remaining spice mixture. Pour olive oil over the meat and roast in a preheated oven at 180 °C for about 70-85 minutes (depending on the quality). Cut the potatoes into medium-sized pieces (peeled or unpeeled, depending on taste) and add to the roast after 30 minutes. Meanwhile, baste the roast and potatoes repeatedly with the escaping juices, adding more water or soup if needed. Remove the finished roast, wrap it in aluminum foil and let it rest for another 10 minutes. Then carve and serve with the potatoes.
