For the baked melanzani, wash the melanzani and cut into finger-thick slices. Bread each slice and fry over medium heat until golden brown on one side first.
Place on a board with the unfried side, apply a drizzle of ketchup to the baked out side and top with toast cheese. Bake all slices until golden brown.
Serve the baked melanzani as a side dish.
