For Baked Quince, cut the washed fruit in half lengthwise and cut out the core. Soak the quinces in lemon water to prevent them from turning brown.

Heat 2/3 of the sugar with the water, the spices and the juice of one lemon in a pot.

Add quince halves and cook for about 20 minutes until they are soft.

Place them cut-side up on a greased baking tray or in a pan and pour a little broth over them.

Sprinkle the remaining sugar on top and place in an oven preheated to 250 °C.

Bake until the fruits get a golden yellow surface. Drizzle the baked quinces with a little broth and serve.
