For the spiced Easter pinze, first prepare a dampfl. To do this, dissolve yeast with a little sugar in some lukewarm milk. Add 60 g flour and make a firm dampfl. Let it rise for about 15 to 30 minutes.

Then knead together 30 g sugar, 120 g flour, 2 eggs and the dampfl and let rise again.

Knead this dough well with the remaining flour and sugar, butter, yolks, a little salt, lemon zest, anise and cardamom.

Form it into a ball. Line a saucepan with baking paper and let the dough rise in it. Brush the dough with the yolk (should not run down the dough) and set aside until the egg has dried.

In the meantime, preheat the oven to 180 °C.

Cut the dough ball three times in the middle to create the typical pinzen shape. Bake in the oven for about 30-40 minutes.

Test with a stick: If nothing sticks when you poke it with a wooden chopstick, the spiced Easter pinze is ready.

Before serving, place a dyed hard-boiled egg in the center.
