For the fruit curd cream, remove the stems from the currants. Save 1 tablespoon of berries for garnish.
Lightly mash the remaining fruit in a bowl with a fork. Add sugar and let stand in the refrigerator for half an hour.
Mix curd with vanilla sugar in a bowl with milk until creamy. Mix in the fruit. Serve garnished with berries.
