Instructions:

For the semolina graters, boil the milk with butter, sugar and salt. Add the raisins so that they swell nicely.

Slowly empty the semolina into the boiling milk and let it boil down. Stir carefully until a lump forms. Break the semolina into small pieces with a spatula and let it brown.

Before eating, sprinkle with cinnamon and/or sugar.

Preparation Tip:

If you don't like raisins, make the semolina ricotta without them.
