Instructions:

For the rice salad, cook rice and let cool. Meanwhile, peel shallot and chop finely. Wash zucchini and bell bell pepper and cut into fine cubes. Wash tomatoes, remove skins, seeds and also finely dice. Drain the sweet corn.

Mix the vegetables together with the cooled rice in a bowl and marinate the salad with oil and lemon juice. Season with salt and pepper.

For the turkey skewers, cut turkey into thin slices. Peel garlic and cut into thin slices. Combine garlic with oil, lemon zest and sage leaves in a deep bowl. Add meat and mix well. Salt and pepper the meat and cover the bowl. Place in refrigerator and allow to marinate for about 1 hour.

Then remove garlic and lemon zest from meat and pat lightly. Thread onto two skewers and grill on both sides for about 3 minutes each.

Just before serving, fold chopped parsley into salad and divide rice salad between two plates. Place turkey skewers next to it and bring to the table.

Preparation Tip:

You can also replace the turkey with chicken breast or pork tenderloin.
