For the apricot cake, cream the butter, sugar, yolks and eggnog until very fluffy. Beat the egg whites until firm. Gently fold in the flour, chocolate chips and beaten egg whites.
Spread the dough on a baking tray lined with baking paper and cover with halved apricots.bake the apricot cake at 170 degrees for about 40 minutes.
Preparation Tip:
Serve the apricot cake sprinkled with cinnamon and sugar as desired. It tastes especially good when sprinkled with toasted almonds.
