Instructions:

For the green veggie pizza with asparagus, first prepare the dough. To do this, dissolve the yeast in 100 ml of warm water with the honey. Sprinkle a little flour on top and let the dampfl rise briefly in a warm place. Knead the pizza flour with salt, the dampfl, olive oil and about 1/4 l warm water to a smooth dough.

The amount of water depends on the flour! The kneading is best done with a food processor. Dust the dough with a little flour and let it rise, covered, in a warm place for about 30 minutes.

For the topping, crush the canned tomatoes. Wash the vegetables. Cut away the woody ends of the asparagus, peel the lower third and cut into pieces.

Slice the zucchini, clean the spring onions and cut them into rolls. Cut the tomatoes into quarters. Drain the mozzarella and slice or shred.

Preheat the oven to 250 °C top and bottom heat with a pizza stone.

Knead the dough again and roll it out on floured baking paper into 2 pizzas the size of the stone.

Spread the canned pelati on the dough. Sprinkle oregano on top. Spread the vegetables evenly on the pizzas first, then the mozzarella. If necessary, lightly salt the vegetables. Bake with the paper on the pizza stone, one at a time, for about 10-12 minutes.

Pluck the basil from the stems and spread on the finished pizza, drizzle a few drops of good olive oil on top and serve the green veggie pizza with asparagus hot!

Preparation Tip:

For the vegan version of the green veggie pizza with asparagus, use vegan mozzarella.
