A delicious mushroom dish for any occasion!

Heat the oil and butter in a frying pan and sauté the garlic and finely diced shallots until soft. Chop the oyster mushrooms, add them and season with salt and freshly ground pepper. Steam until the mushrooms are soft. Add chives, chopped and continue to cook for about 1 min. Cool.

Clean and dry the salmon. (Provided it has already been prepared by the fishmonger). Make several cuts about 5 cm long on the salmon with the kitchen knife. Brush with oil and fill with mushrooms. Grill in an open oven at 200 °C.

Serve with boiled peeled potatoes, champagne sauce and warm leaf salad with pine nuts (see below).
