Baked Mozzarella Tomatoes

Coat an ovenproof dish with a little oil. Preheat the oven to 220 °C elcius.

Rinse the tomatoes, dab them dry and cut them into slices about 1 cm thick with the cheese. Layer the cheese and tomato slices like a roof tile in the ovenproof dish. Peel and finely dice the onions and garlic. Sprinkle the garlic pieces with the salt and mash them with a fork. Mix the olive oil with the onion cubes, garlic and pepper and drizzle over the tomato and cheese slices.

Bake the mozzarella tomatoes in the heated oven on the middle shelf for 20 min.

Rinse and dry the thyme and sprinkle over the mozzarella tomatoes. Bake the tomatoes for another 5 minutes.

Serve with freshly baked white bread.

Prepared according to the same recipe, the tomatoes with mozzarella can also be served as a cold entrée. Instead of thyme, sprinkle the tomatoes and cheese with basil.
