Finely grate pumpernickel. Marinate crumbs with rum and sugar. Pour the cherries into a sieve and drain. If necessary, catch a little cherry juice and drizzle it over the crumbs. Whip the cream until stiff. Layer crumbs, cherries and whipped cream in a bowl. Garnish with chocolate chips as desired.
