For the brownies, melt the chocolate in a bain-marie and allow to cool briefly. Preheat the oven to 180 degrees. In a second baking bowl, beat the eggs with a mixer until creamy, slowly adding the sugar.
Continue beating until the mixture is thick and creamy and the sugar is completely dissolved. Fold in the oil and melted chocolate.
In a third baking bowl, whisk together the salt, baking powder, flour and vanilla powder. Add to the chocolate and egg mixture and gently fold in by hand until combined into a soft dough.
Grease a baking dish (about 40 x 28 cm), pour in the batter to a height of about 3 cm and smooth it out with a spoon.
Bake in the oven (convection oven 160 degrees, center) for 20-25 min. Cool and then cut into 5 cm squares.
Preparation Tip:
Instead of the vanilla powder, you can also use 2 tablespoons of vanilla sugar for the brownies. Then take correspondingly less sugar.
