Whip the egg whites until very stiff, add the sugar by the tablespoonful and finally the cornstarch.

Preheat the oven to 150 °C.

Fill the mixture into a piping bag with a serrated nozzle and pipe small bushels onto a baking tray lined with baking paper. Sprinkle with colored sugar pearls if desired.

Place the baking tray in the oven and bake for about 20 minutes. Meringue biscuits may only turn a faint yellowish color.

If you like, you can also shape the meringue biscuits into squiggles (circles) and use them as Christmas tree decorations.
