For the homemade almond paste, put the almonds in a powerful stand mixer and mix several times for about 40 seconds. Always leave to cool for about 1 hour between blending. Repeat the blending process until a creamy puree is obtained.
Pour the homemade almond paste into a clean jar and store in the refrigerator.
Preparation Tip:
The almond paste will keep well refrigerated for at least a month.
