Have you tried this delicious recipe with red wine?
Remove the flowers and stems from the rose hips, slit them open, scrape out the furry seeds exactly. Rinse the cored rosehips thoroughly, dry them with kitchen roll, put them in a large glass and pour the wine over them.
Leave to cool for about 24 hours. Then pour off the wine, collect it and boil it with the honey, stirring, until it becomes a thick syrup.
Strain the rose hips through a sieve. Stir the puree into the syrup and let it boil a second time. Fill hot into jars and seal them on the spot.
