Instructions:

Place the chicken in a large heavy saucepan and add the tamarind, ginger, coarsely chopped lemongrass, chilli, onion and garlic. Chop the cilantro stems and add to the cooking pot.

Keep the leaves for later.

Fill with water so that everything is covered together and weigh down the chicken with a lid or a small frying pan that fits into the cooking pot.

Bring to a boil and simmer gently for about 1 to 1 ½ hours. Next, remove the chicken and remove the meat with a fork.

Mix the sauce with coconut and fish sauce. Put the glass noodles in a suitable bowl, pour boiling hot water over them and let them steep for 3 min. Mix the coriander leaves with the finely chopped chilli.

Remove the glass noodles from the water and fill them into serving bowls. Season with soy sauce. Then put the chicken in first, followed by the sauce and then the cilantro-chili mix. Drizzle with olive oil.
