Rinse the chicken under cold running water, dry, cut into 12 pieces, season with salt and pepper. Grind the garlic cloves in a mortar with the salt to a paste, mix with the lemon peel and parsley. Rub it all over the chicken pieces and leave them in the refrigerator for at least 2-3 hours. Then turn the chicken pieces in the flour to the other side. Heat the olive oil in a frying pan and fry the chicken pieces in the oil until golden brown.
Bring the potato quarters to the table.
