For the Amarena cherries, mix all ingredients except the preserving sugar in a large bowl until well blended, the sugar must dissolve completely, and let sit overnight.

Stir in between. Then transfer the juice to a saucepan and set the cherries aside. Bring the juice to a boil and reduce by one-third to a light syrup.

Add the cherries and the preserving sugar and simmer gently for 5 minutes, stirring often. Pour the Amarena cherries into jars and seal tightly.

Turn upside down for 30 minutes, then invert again and shake gently. Allow to cool completely and store in a cool place.

Unopened, amarena cherries will keep for up to 1 year. Opened a few weeks in the refrigerator. Suitable for desserts and wonderful on ice cream.
