For the kohlrabi-morel vegetables, first soak the dried morels in water. Chop the onion and sauté in olive oil until translucent. Add the peeled and finely chopped kohlrabi and sauté.

Squeeze the softened morels (do not throw away the soaking water, it will be used for the sauce) and cut them into small pieces – add them. Add salt and pepper.

Sauté well, deglaze with a strong shot of white wine. Pour in soaking water, add freshly grated nutmeg and simmer.

When the kohlrabi are soft, add the whipped cream and bring to the boil again. Season if necessary and serve with pasta.
