To be able to cut the moose meat into narrow slices, you need to put it in the freezer for about an hour. If you are using frozen elk meat, do not thaw it completely before cutting. Lightly frozen meat is firm and quite easy to cut with a large heavy kitchen knife or possibly an all-purpose slicer into paper-thin slices, through which the kitchen knife should already be showing.

Fry the slices of meat in a heavy frying pan in individual portions in the butter. The frying pan should not be too full, so that the meat does not draw water. Put the fried meat aside in a warmed baking dish. When all the meat slices are fried, put them all again in the frying pan and pour the water. When the water has evaporated, the slices of elk meat are ready to be served. You season it to your liking on the plate.


-You can cut paper-thin slices only from slightly frozen meat. Carpaccio of meat (or fish) is also cut in this way.
