Sauté onions in butter for a few minutes until soft. Sprinkle in flour and sauté for another minute. Add milk and clear soup, bring to a boil, season with pepper and simmer on low heat for 5 min.

Add grated cheese, stir until melted (but do not let bubble).

Season with salt if necessary.
