For the Fish Cakes with Homemade Hot Pepper Sauce, soak the fish in water, preferably a few hours or, depending on the fish, a few days beforehand. Then pick the fish and chop it or grind it in a food processor.
Mix with flour, butter, egg, milk and baking powder to a dough. Season with chopped scallions, garlic, chili, thyme and salt.then fry the fish balls in hot fat by the spoonful into small cakes.
