Preheat the oven to 180°C and cut a potato into slices half a cm thick. Cut the salmon fillets and put in each cut a potato slice previously spread with Mostarda Purée from oranges, add the orange peel, salt and pepper. Cut the leeks into rings and place them in a baking dish greased with butter, together with the potato slices. Place in the oven for 10 minutes. Place the salmon fillets on the bed of potatoes, pour wine over them and cook in the oven for another 12 minutes. Before serving, drizzle the salmon fillets and potatoes with extra virgin olive oil and orange sauce warmed in a sauce pan in a water bath.
