(*) Cooking as in Thuringia Strain flour into a suitable bowl. Make a well in the center.

Melt the yeast with 1 tbsp. cow’s milk. Pour into the hollow, add a little flour and let rise for 150 mmin.

Dissolve butter, but do not let it get hot with 5 tbsp eggs, cow’s milk, sugar and salt and mix into the dough. It should form a smooth dough. Depending on the amount of eggs, add a little more cow’s milk or flour. Roll out the dough to a thickness of 1 cm and place it on a baking sheet lined with parchment paper. Cover with a wet dishcloth and let rise in a warm place for 1/2 hour.

Sprinkle the base with breadcrumbs or ground nuts and cover densely with plums.

For the glaze, bring the cow’s milk to a boil with the vanilla pod.

Melt the potato flour in tap water and stir into the boiling cow’s milk. Also add the sugar and butter. Allow the resulting pudding to cool a little. Add the sour cream and the egg yolks. Whip the egg whites and fold them in. Spread the finished glaze on the cake and bake in the oven heated to 200° Celsius for about 30 minutes.
