For the peach compote with lavender, peel the skin off the peaches, quarter them and remove the stone.
In a large saucepan, bring 200 ml of water to a boil with the wine, sugar and lavender flowers and simmer for 8 minutes. Add the peach wedges and continue to simmer over medium heat for 4 minutes.
Carefully lift out the peach pieces and place in prepared twist-off jars. Boil the broth for another 4 minutes. Then pour into the jars while still hot – the peach pieces must be completely covered. Drizzle a little alcohol over the top, light and seal immediately. Store the peach compote in a cool and dark place.
Preparation Tip:
If you want to prepare the peach compote without alcohol, then replace the white wine with white grape juice or simply use more water.
