For the dough:


For the pumpkin cinnamon muffins, preheat the oven to 200 °C. Prick the pumpkin flesh all around a few times with a fork, place on a greased baking tray and sprinkle with cinnamon, lime zest, vanilla sugar and clove powder. Cook on the middle shelf for about 35 minutes.

Mix salt, sugar, flour, baking soda, cinnamon and baking powder in a bowl. Drain the pumpkin water and scrape the flesh from the peel with a spoon, mash and leave to cool.

Turn the oven down to 180 °C. Mix egg, oil and pumpkin puree and add to dry ingredients in batches. Stir in grated cooking chocolate.

Line a muffin tray with paper cups and fill each cup 2/3 full with the muffin batter.

Bake the pumpkin cinnamon muffins for about 35 minutes.

Preparation Tip:

The pumpkin cinnamon muffins can be additionally refined with small apple cubes and ground hazelnuts.
