Instructions:

Rinse plums, cut in half and remove seeds. Bring red wine to a boil with 1/16 liter sugar, cinnamon, water and slice of one lemon, add plums and simmer until liquid is reduced.

Rice mixture: bring milk with butter and salt to a boil, add long-grain rice and steam over mild heat until tender, cool over. Beat butter with sugar until fluffy, add salt and grated lemon peel. Fold in yolks, crème fraîche and long grain rice. Whip egg whites until firm, beat with sugar and fold into rice mixture. Fill the plums into a greased gratin dish, spread the rice mixture evenly over the top and bake in a heated oven at 180 °C for about 45 minutes, sprinkle with powdered sugar and serve. You can also save a little bit of snow and make a snow dome as a finishing touch.
