Finely grate the Gouda and whisk it with the milk, oil, salt, eggs and Parmesan in a hand mixer until there are no more pieces in the liquid.
Stir through the liquid as well as the flour to form a soft dough. Grease muffin tins (for small muffins, O 4, 5 cm) with butter and fill each with 1 to 2 tsp of batter. Bake at 200 °C , fan 180 °C , gas mark 4 for approx. 20 min. until cheese muffins are light yellow.
Remove, cool slightly and serve while still warm.
Tip The muffins are “crispy on the outside, chewy on the inside”.
