For the celery and pear puree, peel and dice the celery.
Peel and quarter the pears and remove the core. Steam the celery for 12 minutes, the pears for 4 minutes in a perforated steamer basket at 100 °C.
Puree pears and celery with whipped cream and garlic and season the celery-pear puree with salt, pepper and nutmeg.
