Instructions:

For the nut cake, separate 4 eggs. Beat 2 eggs and 4 yolks and 100 g sugar in a food processor until foamy.

Beat 4 egg whites with 100 g sugar until stiff and fold into yolk mixture alternately with nuts and breadcrumbs.

Grease and flour the pan, pour in the mixture and bake at medium heat for 50 minutes. Turn cake out of pan and let cool, then cut twice horizontally.

For the cream, cream butter, gradually stir in 150 g sugar, 1 yolk and dissolving coffee. Assemble the dough layers with the help of the cream.

For the glaze, stir 200 g sugar and mocha for at least 10 minutes. Spread nut cake with jam and glaze with mocha-sugar mixture.

Preparation Tip:

The nut cake also tastes very good covered with chocolate icing.
