Instructions:

For the mashed potatoes, peel the potatoes, cut into equal pieces and boil in salted water until soft.

In a separate pot, heat the milk and butter, press the soft potatoes into the milk, mix well and season with salt and nutmeg.

For the sauce, beat the egg yolks in a bowl over a water bath until foamy. Mix the basil with the oil and stir into the foamy beaten egg yolk. Season to taste with salt, pepper and chili.

Salt the steaks and sear them in a hot pan with 2 tablespoons of oil on both sides for 1 minute, let rest briefly and season with pepper before serving.

Spread the mashed potatoes on a plate. Place the steaks on top, drizzle with the basil egg foam and garnish with fresh basil.
