For the liver cheese rolls with mustard pickles, radishes and blue cabbage sprouts, spread the liver cheese slices on a clean work surface, place the mustard pickle slices on top and cut off exactly the length and width of the mustard pickles (liver cheese and mustard pickle should have exactly the same surface).

Using scissors, cut off some of the sprouts to form a small bunch, place on top of the Leberkäse – mustard cucumber strips and roll up tightly.

Stand the rolls up and place them on a radish slice. Arrange the liver cheese rolls with mustard pickles, radishes and blue cabbage on a platter or large plate, sprinkle with a few sea salt flakes and drizzle with a little olive oil.
