For the wine cream with apricots, first soak gelatine in cold water.
Drain the apricots and cut into wedges. Set aside a few slices for decoration.
Now whip sour cream, sugar and vanilla sugar until fluffy. Stir in wine and lemon juice.
Squeeze out the gelatine, dissolve in a little water over a low heat and stir into the cream.
Divide the apricots into 4 dessert glasses, spread the wine cream over them and chill for at least 2 hours.
Before serving, decorate the wine cream with the apricots set aside, chopped pistachios and mint.

The wine cream can also be perfectly combined with other types of fruit, such as raspberries, strawberries or peaches.
