For the vegetable pizza, first prepare the sauce. For this, sauté the onion and garlic in olive oil and add the tomato pulp. Add the vegetable stock and cook gently for 10 to 15 minutes. Mash the tomato pulp, season the sauce and finally add the basil.

Then prepare the pizza. First, put the flour in a large enough bowl. Drizzle in the oil and make a pit in the center. Pour in some warm water with finely crumbled yeast and sweetener and mix to a thick paste. Allow this mixture to ferment with the lid closed. Now add the remaining water and all the ingredients and knead the dough for a good 5 minutes until it is smooth.

In the case of dry yeast, knead all the ingredients at once – steam is not necessary.

Next, oil the surface of the dough and let it rise in a warm place, covered with a dishcloth, until its volume has increased by at least half.

Press the dough together a little, form into four balls, roll out to the size of a plate (or the size of a whole baking tray), spread with tomato sauce and cover with the vegetables. Make sure to leave a 2 cm border. Sprinkle cheese on top, place on the baking tray and put in the preheated oven at 220 °C. The baking time of the vegetable pizza is 20 minutes.
