Cinnamon stars are the epitome of wonderful Christmas cookies! They bring the magic to the cookie plate!

Knead all ingredients with little egg white to a firm mass. Let rest in the refrigerator for one hour. For the lemon glaze, mix the egg whites with the confectioner’s sugar and lemon juice until foamy. Roll out the dough to about 5 mm thick. Brush with the lemon glaze. Cut out the dough with a wet star cutter (approx. 4cm), place the stars on a baking tray covered with baking paper and bake in a preheated, slightly open oven (150°C) on the lowest rack for approx. 15-20 minutes. Knead the leftovers together again and if necessary with a little addition of more almonds knead again to a firm consistency.

Then the dough can be rolled out again and coated with lemon sugar glaze and cut out again.
