A great cake recipe for any occasion:
Separate eggs. Beat the egg whites until stiff peaks form.
Stir remaining ingredients and egg yolks and fold into the whipped cream.
Spread the mixture as thick as a finger on a baking tray lined with parchment paper. Dry in the oven at 100 °C / convection oven 75 °C / gas mark 1 in about two to two and a half hours.
Cool and cut into lozenges (about 9 x 5 cm) with a large kitchen knife. Dust with powdered sugar.
If desired, decorate one rhombus with dissolved cooking chocolate, e.g. with a clef.
