For the recipe Warm pyre with cherries, rinse the cherries, cut them in half and remove the pits. Grease four small ramekins or alternatively a large gratin dish with butter and sprinkle with a layer of sugar. Slit the vanilla bean lengthwise and scrape out the pith. Whip the cream, eggs, 60 grams of sugar and the vanilla pulp with a whisk to a so-called “royal”.

Cut the brioche to the size of the ramekins and layer the bread first, then the cherries and a little bit of royal in the ramekins until they are just full. Then bake for 10 to 15 minutes in the oven preheated to 180°C.

Turn the warm pile of cherries out of the mold onto a dessert plate, dust with powdered sugar and serve while still warm.

Preparation Tip:

Decorate the warm pyre with cherries with a fresh cherry and a dollop of whipped cream. On vanilla ice cream tastes wonderful with it!
