For the violet-lime cheesecake, first crush the butter cookies and mix with granulated sugar and butter. Cover the mixture about 1/2 cm thick firmly from the inside to the edges of the baking dish and also the bottom and press well. Take good care not to make any holes. Pre-bake at 170 °C for about 10 minutes and let cool well.

Mix the curd cheese, Philadelphia, sour cream, granulated sugar, vanilla sugar and salt together (be careful not to stir in air!). Add the whole egg and stir again briefly. Finally, stir in lime juice, lime zest and violet syrup. Pour mixture into the pre-baked pan.

Bake the violet-lime cheesecake at 145 °C for approx. 105 minutes.
