Grate or finely chop the peeled cucumber. Add a little salt and let stand for at least 20 minutes. Squeeze the cucumber well.
Wrap yogurt in a kitchen towel, squeeze and stir into the cucumber mixture.
Mix with garlic and olive oil and season with salt and pepper.
Refrigerate the tzatziki until ready to serve.
