For the tomato salad on a bed of arugula, wash the tomatoes and cut into thin slices. Wash the arugula and spin dry.
Peel the onion and cut into thin rings. Divide the arugula on 2 plates, place the tomato slices and onion rings on top.
Then add the capers and the feta cubes. Mix a dressing of olive oil, balsamic vinegar, salt and pepper.
Spread the dressing over the two plates.
Preparation Tip:
The tomato salad on a bed of arugula goes very well with a fresh, still lukewarm baguette. If you don't like capers, just leave them out.
