Boil tomato juice to two thirds.

Heat the olive oil in a pan. Sauté shallot until translucent. Add cherry tomatoes and season with a little salt, pepper and sugar. Add rosemary and basil.

Add thickened tomato juice and simmer at low temperature. Add lemon thyme and cheese.

Serve with Mashed potatoes
