For the omelet, mix the chopped fruit with sugar and liqueur and leave to infuse.

Grease an omelet pan and sprinkle with flour.

Whip egg whites, gradually adding sugar as you beat. Beat until stiff but still creamy. Add egg yolks, flour and vanilla sugar to the beaten egg whites and gently fold in the mixture.

Immediately pour the batter into the prepared pan and spread out a little higher from the center to the edges. Then bake in the oven preheated to 250° C for 4-5 minutes until golden brown.

Put the prepared fruit on the omelet, fold it with the polette. Turn out onto a prepared plate and cover with warmed chocolate sauce.

Decorate the finished omelet with whipped cream and serve immediately.
