Rinse the lentils until the water remains clear and soak in one and a half liters of cold water for half an hour.

In the meantime, very finely dice the onions, remove the peel from the ginger and finely dice or grate. Halve the chili pepper, remove the seeds, rinse and chop finely. Cut apricots into thin strips and mix with spices except turmeric in a baking bowl.

Drain off soaking water. Boil lentils with fresh water, skim. Add two diced onions, squeezed garlic cloves, chili and turmeric, season with salt, simmer on low heat for ten minutes. The lentils will become partially mushy.

Brown the remaining onions in olive oil and add to the lentils form. In the same frying pan, brown the spiced apricots in clarified butter over medium heat, stirring. Do not allow the spices to burn. Stir everything into the lentil dish.
