For the raisin rum balls, melt the chocolate over steam or over very low heat in the microwave and allow to cool slightly.

Finely chop the raisins. Strain sugar through a sieve to prevent lumps. Mix sugar with nuts, add lemon juice and rum. Add the melted chocolate and raisins and mix well.
