For raisin cookies, cream butter and sugar. Add egg yolks and rum one at a time.

Rinse raisins, dry with kitchen roll and mix with lemon zest and chopped walnuts. Mix the flour with the baking powder and gradually stir into the batter.

Whip the egg whites to stiff peaks and fold into the batter.

Grease the baking tray with butter.

Using 2 teaspoons, place mounds of dough on the baking sheet.

Preheat oven to 200 degrees Celsius and bake the raisin cookies on the middle rack for about 15 minutes.

Preparation Tip:

Use untreated organic lemons for raisin cookies!
