For the Raffaelo Easter Bunny, preheat the oven to 180° degrees top/bottom heat. Grease and flour two small Easter bunny or lamb molds.

Unwrap the Raffaellos and roughly crush them, separate the eggs and beat the egg whites with a pinch of salt until stiff. Stir in the sugar and vanilla sugar, slowly add the yolks and fold in the flour with the baking powder. Finally, stir the Raffaello into the sponge mixture.

Fill the Easter molds about 2/3 full and bake for 20-25 minutes (test with a stick). Let cool slightly, remove from the mold and sprinkle with powdered sugar. You can also coat the Raffaelo Easter Bunny with white chocolate and sprinkle with coconut flakes.

Preparation Tip:

For a large lamb mold, you can simply double the amount from the Raffaelo Easter Bunny recipe.
