For the Prosecco with woodruff, first prepare a woodruff syrup: Boil sugar with 100 ml water. Add the woodruff and leave to infuse for 10 minutes. Pour the syrup through a fine sieve and allow to cool.
To serve, pour 1-2 tablespoons of woodruff syrup into a champagne glass and top up with Prosecco. Add 3 raspberries to each and serve the Prosecco with woodruff immediately.
Pour the remaining syrup into a sealable container and store in a cool, dark place.
