Instructions:

For the poppy seed cake with crumbles, sift the flour into a baking bowl and carefully mix with the yeast. Add the sugar, vanilla sugar, butter, milk and salt and knead the dough with a mixer with a dough hook, first on the lowest, then on the highest speed for about 5 minutes. If the dough is too sticky, add a little more flour.

Let the dough rise in a warm place until it is about twice as high and then knead it again at the highest speed. Roll out on a greased baking sheet.

For the topping, boil the poppy seeds with water and add sugar, vanilla sugar, lemon zest and cinnamon. Mix it all together with the butter, honey and milk and make a spreadable mixture. Fold the raisins into the mixture, let cool and spread evenly on the dough.

For the crumble, sift the flour into a bowl. Add the sugar, vanilla sugar, butter and cinnamon and mix to make crumbles. Sprinkle these evenly over the topping.

Place the poppy seed cake with crumbles in the oven heated to 175 °C and bake for 25-30 minutes.
